At CKC Farms we make cheese 3-4 times a week and pack fresh cheese daily to ensure optimal flavor. Our cheeses are made with organic vegetable rennet so they are vegetarian friendly and we also use organic ingredients whenever possible to enhance and compliment the flavor of our delicate cheeses. We make cheeses year round which allows us to showcase seasonal variations in the flavors of our cheeses. In colder weather the milk has a richer flavor resulting in a creamier thicker cheese and in warmer weather the milk is in abundance which gives the cheeses very light grassy notes. Please come and visit us at the Farmers Markets for yummy samples of our delicious products!

Pasta with CKC Farms Seasoned Feta
Quick and delicious supper you can toss together any night of the week.

Ingredients
  • -1 lb. pasta of your choice (we prefer whole wheat Farfalle or Penne)
  • -1 small jar (half pint) CKC Farms Seasoned Feta
  • -1 teaspoon fresh basil, chopped
  • Optional:
  • -1/2 pound of chicken (sliced thin) or shrimp sauteed over high heat with a tablespoon of olive oil from feta jar
  • -1/2 cup to 1 cup of fresh vegetables of your choice (zucchini, mushrooms, cherry tomatoes, yellow squash, bell pepper, eggplant, spinach or any type of leafy green) medium sliced and sauteed over high heat with a tablespoon of olive oil from feta jar
Directions
  • 1- Bring a large pot of salted water to a boil. Add pasta and cook to package directions.
  • 2-After draining pasta put back into warm pot and add chicken or shrimp (if using), vegetables (if using) and entire bottle of CKC Farms Seasoned Feta with the olive oil. Stir thoroughly to coat the pasta with the seasoned oil.
  • 3-Sprinkle the chopped fresh basil on top of the pasta and enjoy a wonderful dinner!
  • Note: this pasta can be eaten chilled as well if you omit the chicken or shrimp.

DESCRIPTION - Farm fresh goat cheese with roasted beets

Ingredients
  • 2 lbs. Beets
  • 1 8oz. container of CKC Farms fresh goat cheese
  • olive oil
  • Salt
  • Pepper
Directions
  • Preheat oven to 350 degrees
  • Peel beets then quarter them and arrange in a large roasting pan.
  • Toss beets with about 2 tablespoons of olive oil and sprinkle with salt and pepper
  • Insert into preheated oven and bake for 20 minutes, turning them once halfway.
  • Remove from the oven and allow to cool slightly.
  • Arrange roasted beets on a serving dish and crumble the wheel of fresh goat cheese on top.
  • Enjoy!

DESCRIPTION - Another quick, delicious and oh so nutritious way to enjoy CKC Farms Seasoned Feta!
PREP TIME COOKING TIME TOTAL TIME

Ingredients
  • -2 cups cooked brown rice (follow package directions)
  • -1 small jar (half pint) CKC Farms Seasoned Feta
  • -1 teaspoon fresh basil, chopped
  • -2 cups baby spinach
  • -2 cloves of garlic chopped
  • Optional:
  • -1/2 pound of chicken (sliced thin) or shrimp sautéed over high heat with a tablespoon of olive oil from feta jar
Directions
  • 1- Cook brown rice according to package directions.
  • 2-After brown rice is done cooking, heat a small sauté pan over medium heat. Add 2 tablespoons of CKC Farms Seasoned Feta olive oil (from the jar) to the pan along with 2 cloves of chopped garlic. Cook for approximately 2-3 minutes being careful not to burn the garlic.
  • 3-After the garlic has been cooked, add 2 cups of baby spinach and stir until wilted.
  • 4-Mix the garlic spinach mixture into the brown rice along with 3 tablespoons of CKC Farms Seasoned Feta making sure it is well distributed.
  • 5-Serve warm with a sprinkle of chopped fresh basil on top (and sautéed chicken or shrimp if using) of the brown rice and enjoy a wonderful dinner!
